GAPS Breakfast Casserole

This GAPS approved breakfast casserole makes the perfect family tradition for the holiday season. We enjoy this casserole dish every Christmas morning. It does not take much time to whip up the morning of, or you can prepare it in the fridge ready to bake the night before! The options are endless with this dish to tailor to your family's preference! You will want to save this one!


  • 3 Tablespoons Butter (or Ghee)

  • 1 lb GAPS Approved Sausage

  • 2 Cloves Garlic, Minced

  • 1 Teaspoon Organic Onion Powder

  • 1-2 Cups Butternut Squash

  • 12 Ounces Organic Broccoli

  • 1 Cup Organic Onion

  • 12 Eggs

  • 1/2 Cup Coconut Milk

  • 1/4-1/2 Teaspoon Sea Salt

  • 1/8 Teaspoon Pepper

  • Optional: Peas, Bacon, cheddar cheese, any other veggies or meat!


  1. Preheat oven to 375 degrees Farenheit

  2. Heat skillet and butter over Medium-Low Heat. Cook sausage and garlic until browned. Add salt, pepper, and onion powder.

  3. Add veggies to skillet, cook until tender.

  4. In a separate bowl, whisk all of the eggs and coconut milk

  5. Spread the sausage mixture into a 9x13 casserole dish

  6. Pour the egg mixture over the sausage & veggies

  7. Optional: Top liberally with raw cheddar cheese

  8. Bake in oven for 30-35 minutes until top is lightly brown and eggs have set

  9. Enjoy!
