Homemade Snicker Bars

These are so dang good. Spoiler... if you have kids, you are going to want to hide them somewhere deep in the freezer or they will disappear quickly! The best part is, no baking required! I call these Snicker bars because they taste like peanut butter & coconut mixed with a delicious cashew crust on the bottom. Recipe below!
Homemade Snicker Bars
Ingredients:
Crust:
6 Dates with Pits removed. Soak in hot water to soften.
1/2 Cup Cashews
1/2 Cup Coconut Flour
2 Tablespoons Honey
2 Tablespoons Coconut Oil, Melted
1/4 Cup Butter, Softened
Caramel Layer:
1/2 Cup Peanut Butter
1/4 Cup Coconut Oil
3 Tablespoons Honey
1 teaspoon Vanilla
1/8 teaspoon Sea Salt
1/4 Cup Cashews, Chopped
Instructions
Base Layer
Combine all ingredients in food processor. Mix until it reaches dough-like consistency.
Line 8x4 bread pan with parchment paper. Press the Crust layer down firmly using a silicone spatula so it is nice and even. Place in freezer while you prepare the caramel layer.
Caramel Layer
Combine all ingredients except the cashews in a small saucepan over low heat. Let simmer until it has completely liquified, about 2-3 minutes.
Pour mixture over top of crust/base layer. Sprinkle the chopped cashews on top.
Place in freezer to let is harden completely.
