Broccoli Cheddar Soup




A bowl of warm and comforting soup is a great way to cozy up and relax on a chilly day! This broccoli and cheddar soup recipe will leave you wanting seconds. This recipe is fantastic if you need a quick and easy comfort meal or to throw in the freezer fora quick thaw when you are feeling under the weather or just need a break from cooking!

Broccoli Cheddar Soup


Ingredients:

  • 1 Tablespoon Butter

  • 1/4 teaspoon Salt

  • 1 Large Yellow or Sweet Onion, Diced

  • 2 to 3 cups Filtered Water

  • 2-3 Large Carrots, Peeled and Diced

  • Approx. 10 oz Fresh Broccoli

  • About 2 Cups Shredded Cheddar Cheese (6-8 ounces)

  • 1/2 teaspoon Salt

  • Salt and Pepper to taste



Instructions:

  1. Warm a large saucepan on low-medium heat and then add 1 tablespoon of butter.

  2. Add the diced onion and 1/4 teaspoon salt and cook until just starting to brown, about 5-8 minutes.

  3. Add the carrots and broccoli to the saucepan, and then add enough water to cover the vegetables and bring them to a boil.

  4. Cover the saucepan and lower the heat to simmer the vegetables for about 12-15 minutes, or until the broccoli and carrots are tender.

  5. Turn off the heat, take the cover off and add the cheese and salt, and stir until cheese is melted. If you need to, add a bit more water.

  6. Cool for a bit and then blend the soup in batches. Blend part or all of the soup depending on whether you want it creamy or with pieces of broccoli, carrot and onions. If you're finding it too thick, add a tablespoon of water at a time and blend. Salt and pepper to your liking.

  7. Serve warm. Store in the refrigerator for a few days or freeze for a few months.
